We’re delighted that student chef, Sophie Kennard, who is one of our team members, was recently announced as the South West Student/Apprentice Chef of the Year 2018.
The 19-year-old from Brompton Regis on Exmoor, who attends Exeter College and also works here at The Swan, picked up the award during the presentation ceremony at Exeter Golf & Country Club on Wednesday, October 24.
Sophie, who is currently working towards her level three in professional cookery, said: “I was completely shocked to win the award as I was up against some very talented young chefs. I really didn’t expect my dishes to win but I’m absolutely delighted that the judges thoroughly enjoyed my creations.
“Not only did I manage to scoop the South West Student/Apprentice Chef of the Year 2018 award, I was also presented with the award for the Best Showcase of Regional Ingredients. This was just the icing on the cake.
“For the final I had to prepare a two-course meal for three people in 90 minutes. My starter was breast of Exmoor pheasant with pancetta, faggot and mulled wine jus and for the main course I served Cornish hake, celeriac and apple with a Somerset cider sauce.”
South West Chef of the Year recognises the extraordinary talent among the professional chefs, student chefs, home cooks and junior cooks of the South West of England through five entry categories available. Launched in 2004, the competition is now celebrating its 15th year.
Sophie has worked at The Swan, which is an AA Four Star Gold Inn and the oldest pub in Bampton, for two and a half years.
We’re thrilled that Sophie was crowned the South West Student/Apprentice Chef of the Year. She is extremely talented, and the award is thoroughly deserved. We’re so proud Sophie is part of our team here at The Swan and look forward to supporting her in her career going forward.
